| PASTA SALAD WITH MOZZARELLA, SUN-DRIED TOMATOES, OLIVES, AND CHICKEN
1 package Penguin Natural Foods Napoli Gourmet Pasta Salad
1/2 cup drained oil-packed sun-dried tomatoes
8 ounces fresh water-packed mozzarella cheese, drained, cut into 1/2-inch pieces
1 cup (packed) fresh basil leaves, thinly sliced
1 cup freshly grated Parmesan cheese (about 3 ounces)
1/2 cup minced pitted oil-cured black olives
1 pound cooked chicken breast, cubed
Prepare pasta salad according to package instructions. Add sun-dired tomatoes, mozzarella, basil, Parmesan, olives, and chicken; toss. Season to taste with salt and pepper. (Can be made 6 hours ahead. Cover; chill. Bring to room temperature before serving.)
Makes 8 servings.
